First, you take whole pig's ears and wash them thoroughly to remove any impurities. Then, you boil them in hot water until they become tender. Once the pig's ears are fully cooked, they are cut and undergo a first round of drying. The meat is rolled and dried after making the pig's ear gum. It can be a bit labour-intensive, but it is a popular menu item! Combining these two ingredients, we achieve a texture for Pork Chew that is not too tough but chewy enough to provide a satisfying chewing experience.
